Product Description
Glucoamylase FERZYME PG
NON-GMO Liquid Glucoamylase For Potable Alcohol And Brewing
PRODUCT HIGHLIGHTS
FERZYME PG ( EC 3.2.1.3 1,4-alpha-D-Glucan glucanohydrolase) is a food grade Glucoamylase made from non-genetic modified strains of Aspergillus niger through submerged fermentation, extraction and refining processes. FERZYME PG can catalyze the release of glucose units from the non-reducing ends of soluble dextrins by hydrolyzing both linear (1,4-alpha-D) and branch (1,6-alpha-D) glucosidic linkages. FERZYME PG is designed for saccharification in brewing industry such as potable alcohol production and production of highly attenuated low carbohydrate beers and improved attenuation.
BENEFITS FOR POTABLE ALCOHOL AND BREWING
Use of FERZYME PG in the production of potable alcohol production and brewing can ensure the following benefits:
- Higher conversion rate from liquefied starch to glucose
- Considerably improves raw material utilization
- Faster fermentation efficacy
- Lower processing cost
- Enables greater conversion rate of liquefied starch to glucose with less processing cost.
Declared Enzyme | Glucoamylase |
Activity | 130,000U/ ml (minimum) |

EFFECT OF PH AND TEMPERATURE ON ACTIVITY
For maximum activity, the optimal pH for FERZYME PG is in the range of 4.0 to 4.5.
FERZYME PG can work at temperatures from 30 to 65°C. Its optimal temperature range for FERZYME PG is 30 to 60°C.
DOSAGE GUIDELINES
Industry | Temperature | PH | Dosage (%) | Time (minute) |
Alcohol | 30~62°C | 4.0~4.5 | 0.065~0.085 | One-step fermentation |
Beer | 58~62°C | 4.0~4.5 | 0.02~0.06 | 60 |
Rice Wine | 28~32°C | 4.0~4.5 | 0.04~0.08 | 3 days |
Soy Sauce | 58~62°C | 4.0~4.5 | 0.04~0.06 | 30~60 |
Vinegar | 58~62°C | 4.0~4.5 | 0.06~0.08 | 30~60 |
Note:
1. The above dosage is on dry solid base (DSB).
2. The exact dosage depends on the actual processing conditions such as raw materials, temperature, reaction time, pH and the desired results of the individual plant. To optimize the dosage, it is recommended to conduct a number of trials prior to routine use of this product.
PACKAGING, STORAGE AND SHELF-LIFE
FERZYME PG is packaged in 25kg, 30kg food-grade plastic drums or 1125kg IBC totes. Customized packaging is available upon request.
Typical shelf-life is six months if it is stored below 25°C (77°F) in its original packaging, sealed and unopened, protected from sunlight. Its shelf-life will be eighteen months if this product is stored properly at 0~10°C (32 to 50°F). Prolonged storage and/or adverse conditions such as higher temperatures may lead to higher dosage requirement and should be avoided.
